Weekly Menu Plan – Nov. 30, 2015
How was your Thanksgiving? Last week I shared my menu plan for a perfect Thanksgiving and it was just about perfect to me. Spending time with family ruled the weekend and we had a blast doing puzzles, watching movies and enjoying some gorgeous spring like weather outside. The empanadas were a hit using leftover turkey meat and Caribbean beef.

Are you a Black Friday or Cyber Monday shopper? I did score some amazing deals for my blog ($10/year hosting for life) and renewed my Plan to Eat* subscription. Now that I’m on a stricter diet and it’s helping my Rheumatoid Arthritis pain, we eat in a lot more which means I have to always be ready to cook. Plan to Eat saves the day and I highly recommend giving it a try!
It’s back to the grind this week and we woke up to cooler weather and rain. Time to pull out some comfort foods to get us through the week. This is a short menu planning post. I started menu planning on Thursdays to make sure I had fresh food over the weekend when the boys are all home and I don’t want to spend time grocery shopping.

This Week’s Menu Plan:
Monday:
Chicken Shwarma with Rosemary Sweet Potato Stackers (without the Parmesan cheese for me and Superhubby)
Make Harvest Chicken Salad with Apples and Pecans from Cooking and Beer using leftover turkey. Put it on croissant for Superhubby’s lunch. I’ll eat it on a bed of lettuce.
Tuesday:
Gluten Free Peanut Butter and Banana Muffins from Eat Good 4 Life (they’re dairy free too)
French Toast, sausage and fruit for the boys
Copycat Panera Bread Fuji Apple Salad from Creme de la Crumb and leftover Slow Cooker Chicken Fajita Soup from Foodie Crush for me
Wednesday:
Pulled Tandoori Chicken from A Big Man’s World with Channa Masala (Chickpea Curry) from Yummily Yours and rice
Thursday:
Leftovers because it’s my usual grocery shopping day
